We focus primarily on exceptional beans from Mexico and South America because we believe they deliver the rich, smooth, chocolatey, and nutty profiles we love most — with noticeably lower acidity and a balanced, approachable cup from first sip to last.
While we occasionally source standout lots from other origins (like our Burundi offerings), our core selection is rooted in the regions that consistently give us the flavor we're truly obsessed with. After years of blind tasting and refining our craft, we've made this deliberate choice: prioritize the beans that taste best to us and our customers.
